Pork (proscuitto) may trigger **Alpha-Gal Syndrome** (AGS) in sensitized individuals, caused by galactose-α-1,3-galactose. Reactions (urticaria, anaphylaxis) occur 3–6 hours post-consumption; linked to tick bites. Rare but severe.
