Alpha-Gal Syndrome

Alpha-Gal Syndrome (AGS) is a delayed allergic reaction to mammalian meat (beef, pork, lamb) triggered by tick bites (e.g., *Amblyomma*). Symptoms (urticaria, anaphylaxis) appear 3–6 hours post-consumption due to IgE antibodies against galactose-α-1,3-galactose (α-Gal). Rare but increasing in endemic areas. Avoidance of red meat is required.
