Anisakis
Raw salmon may contain *Anisakis* parasites, which can cause allergic reactions (urticaria, angioedema, anaphylaxis) even after the parasite is dead. Reactions are triggered by thermostable allergens in the worm. Freezing at -20°C for ≥7 days kills the parasite but may not eliminate allergenicity.
