Flour as the primary component of cereal products
In order to accurately evaluate the value of individual types of flour, it is necessary to determine their type and the amount of mineral substances, for example, Type 450. The type of flour is determined by the name of the grain from which it was obtained. In this case, we are referring to the two most important grains, wheat and rye, because they are the most commonly used. A component of the flour name is its type (indicated by the corresponding numbers, e.g. type 450), i.e., the amount of mineral substances, so-called ash, expressed in grams per 100 grams of flour. The higher the number, the higher the nutritional value of the flour. In this way, wheat flour is divided into the following types: - Type 450 - cake flour; - Type 500 - bun flour; - Type 550 - luxury flour; - Type 650; - Type 750 - bread flour; - Type 1050; - Type 1400 - silk flour; - Type 1850 - graham; - Type 2000 - whole wheat flour; while rye flour contains the following types: - Type 500; - Type 720 - bread flour; - Type 1150; - Type 1400 - silk flour; - Type 1850 - old flour; - Type 2000 - whole wheat flour. In choosing flour, it is important to be guided by information about the highest types, which have the highest amount of vitamins and mineral substances, while the flours of lower types are deprived of these components in the cleaning process.
