Tofu - Source and Method of Creation
Tofu is a product known for a long time in the countries of East Asia. Its high value was particularly appreciated by Buddhists who did not consume meat for religious reasons. Thanks to their efforts, tofu spread in Asian countries and is now a product consumed worldwide. Tofu is created from soybeans, which are subjected to a process of cleaning, soaking, grinding with water, filtering, cooking, coagulating, and finally pressing. The most critical stage in the production process is coagulation, which separates soy protein from whey. To achieve this, a coagulating agent is added, usually calcium sulfate or magnesium chloride. The production process of tofu resembles the creation of curd cheese from cow's milk.
