Skorzonera – Distinctive Features and Fascinating Facts
Skorzonera (Scorzonera hispanica L.) is a plant originating from central and southern Europe, which can be found in natural conditions in countries such as Spain, France, and Portugal. It has two main varieties that differ in the shape of the leaves. In Poland, it was not as popular as in the countries of southern Europe, and the first records of skorzonera cultivation date back to the end of the 19th century. In the second half of the 20th century, foreign varieties of skorzonera – Einjährige Riesen and Schwarze Peter – reached Poland. Skorzonera is also known as black viper's grass, as it was used in Spain as an antidote for snake bites. It is a biennial plant whose edible parts are the storage roots resembling radish roots. They are consumed in the first year after planting, but after the first winter, they become hard and fibrous and cannot be used in the kitchen. They reach a length of about 30 cm and have a thick black skin. The most valuable, however, are the shorter roots of 20-22 cm in length, which are tastier and easier to harvest. The flesh of skorzonera is fleshy, white or cream-colored, and tastes like white asparagus. The roots can be eaten boiled or blanched. Besides the roots, the leaves can also be used for culinary purposes, as long as they are young. Skorzonera cultivation is not difficult, the plant requires only fertile, porous soil with a neutral pH. It prefers sun and moderate moisture and can be grown on flat surfaces or in ridges.
