International Chocolate Day, celebrated on April 12, presents an excellent opportunity to appreciate the multifaceted nature of this ingredient, which is perfect not only in sweet desserts, but also in lunch dishes. While chocolate is typically associated with cakes, cookies, or small cakes, it has much wider applications in the kitchen. Its full flavor and unique consistency can transform seemingly simple dishes into true culinary art.
Health advantages linked with consuming dark chocolate and cocoa
If chocolate is to be a regular part of the daily diet, it is advisable to focus on the dark variety as it is the healthiest option. This is primarily due to its high cocoa content, which is a source of polyphenols with antioxidant and anti-inflammatory properties. These compounds may contribute to improving cardiovascular function by increasing the flexibility of blood vessels, reducing oxidative stress, and potentially lowering blood pressure (I. Amoah et al. 2022). Additionally, there is evidence suggesting that regular consumption of cocoa may be associated with a reduced risk of cardiovascular disease, including heart attack and stroke (M.T. Montagna et al. 2019). Bioactive compounds in cocoa may also impact glucose metabolism, which may be important for individuals with insulin resistance or carbohydrate metabolism disorders. Cocoa contains flavanols, which can increase the insulin sensitivity of cells and thereby support proper glucose uptake (M.T. Montagna et al. 2019). Furthermore, chocolate may also impact gut microbiota by promoting the growth of beneficial bacteria that potentially support digestion and immune function (M. Wiese et al. 2019). Finally, the consumption of dark chocolate, due to its content of theobromine, caffeine, serotonin, and its precursors, may contribute to an improvement in mood and a reduction in stress levels (S.E. Jackson et al. 2019). However, it is important to note that the health benefits of chocolate depend on its composition - the higher the cocoa content and the lower the addition of sugar and saturated fats, the greater the health benefits that result from its consumption.
