Chronic thyroid disorders are common and negatively affect the quality of life. Malfunction of this organ before diagnosis can lead to ambiguous symptoms. Deteriorating well-being, irritability, reduced mental performance, and unintentional weight gain are often attributed to overwork and fatigue. However, these symptoms directly relate to the main functions of the thyroid gland, such as the regulation of the metabolic rate, body temperature, and tissue growth. Nutrient-rich and balanced diet is crucial for supporting the functioning of this organ. There are many myths about nutrition that is beneficial for thyroid health, but an increasing number of studies allow for their verification. There are doubts about m.in. legumes, especially soy.
Legume seeds – not merely a protein source
For several reasons, legume seed protein has a considerable advantage over animal protein. Research indicates that proteins found in soybean seeds, pumpkin seeds, peas, beans, and lentils have direct health-promoting properties, and their consumption may lead to the production of biologically active peptides by digestive enzymes (F. Kamran, N. Reddy 2018). Biologically active peptides from legume seed proteins exhibit a wide range of biological activities. Their consumption provides functional benefits such as strong anti-inflammatory, immunomodulatory, anticancer, and cholesterol-lowering properties (F. Kamran, N. Reddy 2018; S. Y. Hess 2010). Legume seeds are also a source of other bioactive substances such as dietary fiber, phenolic compounds, flavonoids, antioxidants, tocopherols, carotenoids, minerals, and vitamins.
