Unfortunately, in our country (despite access to the sea) there is still too little fish consumed, which is a missed opportunity because they are very tasty. Among the many species of this group, halibut deserves special attention. Its meat is characterized by an exceptional taste and tenderness, contains also very few bones. A comprehensive description of halibut and its occurrence
Halibut (Hippoglossus hippoglossus) is a predatory marine fish, also known as kulbak in Poland. It is the largest representative of the flatfish family, which can reach up to 3.5 meters in length and weigh over 200 kilograms. However, halibut is not only remarkable for its size but also for its asymmetrical, flat, and oval body shape, covered in small, dark scales. The underside of the halibut is light and delicate compared to the top. Despite its appearance, the body build of halibut does not hinder its hunting abilities. Its bulging eyes provide a wide field of vision, and its large mouth with sharp teeth makes it a dangerous underwater predator. Halibuts prefer deep waters and live at depths of up to 1600 meters, in rare cases even up to 2200 meters. They primarily inhabit the northern regions of the Atlantic Ocean, the coastal waters of Canada, Greenland, and Iceland, as well as the North and White Seas. An interesting fact is that a small population of halibuts also lives in the Baltic Sea. The most sought-after halibut is the Atlantic, due to its impressive size, but the black and blue halibuts are much more commonly found.
