Traditionally, twelve dishes appear on the Christmas tables, however, the tradition varies depending on the region. The inhabitants of Silesia prepare only six dishes, including those unusual in other parts of the country, such as hemp soup (from seeds) or cake made of dried fruits and gingerbread. The festive meal is a true calorie bomb. What are the risks of gaining weight after the holiday season? We analyze the most popular Christmas dishes in terms of their nutritional values.
This hemp seed soup, known as "The Seedling"
This hemp seed soup is traditionally served in Silesia on Christmas Eve and is one of the lesser-known dishes that a nutritionist can recommend with a clear conscience as a healthy and delicious meal. Here is the traditional recipe of Wera Sztabowa, author of the book "Krupnioki and moczka, i.e. gossip about Silesian cuisine". Recipe: 30 dag hemp seeds should be crushed into small pieces and cooked in 2 l of water until a thick consistency is formed. Add a roux made from a tablespoon of butter and flour to the soup. Season with salt and pepper. Serve the soup with buckwheat groats. Hemp seeds are rich in omega-3 and omega-6 unsaturated fatty acids, fiber, and protein with high nutritional value (comparable to soy protein). They also contain large amounts of potassium, iron, and magnesium (100 g meets the daily requirement). This traditional soup is rich in valuable nutrients, but due to the high fat content of the seeds, it can be high in calories - 300 ml of soup can provide about 300 kcal or more.
