Lactose intolerance is a highly complex condition that has numerous causes and can manifest in various ways. This issue is increasingly prevalent in Poland and worldwide, with every third person in our country affected by it. This situation has led to the market for lactose-free products growing very rapidly. Most stores now offer food labeled „lactose-free“, whereas a few years ago, milk was the only lactose-free food item available. Are all these products truly necessary? Who should be using them?
Is it synonymous with lactose and what are its functions?
Lactose, commonly referred to as milk sugar, is a disaccharide composed of glucose and galactose found in the milk of all mammals. Compared to other sugars such as glucose or sucrose, it has significantly less sweetness. Lactose is not only present in milk but can also be found in baked goods and meat products. Thanks to its presence, these products have a better taste, aroma, and texture. Lactose is also frequently used as an ingredient in medicinal products and dietary supplements such as protein supplements. It is important to remember this if we experience strong discomfort in the digestive system after consuming lactose.
