However, there is a group of people who have a problem with their consumption, as they are not accustomed to their taste, do not have enough financial means to purchase them, or enough time and ideas to prepare them. Nonetheless, there are simple ways to increase their consumption in regular diet.
Why is Consuming Vegetables Beneficial?
Vegetables form the foundation of every healthy diet. The healthiest eating plans in the world, such as the Mediterranean diet, the DASH diet, the anti-inflammatory diet, and the low glycemic index diet, are based on vegetables. It is recommended that vegetables and fruits make up half of every main meal, which corresponds to at least 400 grams per day. Of the recommended five servings of fruits and vegetables, the former should make up the majority of the diet. The ratio of 3:1 between these vegetables and fruits allows for a high amount of micronutrients while at the same time limiting the intake of simple sugars. Vegetables are rich in vitamins and minerals such as vitamin C, beta-carotene, folates, potassium, and dietary fiber, which is essential for proper digestive system function. Most of them (excluding legumes) provide a low number of calories at a large volume, making them ideal components in weight loss. By increasing the amount of vegetables in the diet, satiety is increased and the intake of other, more caloric products is limited. It is important to consume vegetables of different colors to provide all the necessary minerals and vitamins. Vegetables also contain many bioactive compounds such as polyphenols, which have antioxidant, anti-inflammatory, and anti-cancer properties.
