Only by preparing lunch at home can we fully control the ingredient composition, processing level, and quality of the food we consume. Homemade cooking allows us to select additives, regulate salt and sugar content, and balance macro- and micronutrients effectively. While meal preparation may seem time-intensive, cooking larger batches enables efficient use over several days. An ideal lunch should combine high-quality protein, healthy fats (preferably plant-based), and whole-grain carbohydrates, which are significantly richer in nutrients and fiber compared to refined alternatives. Whole grains such as buckwheat, pearl barley, brown rice, wild rice, and basmati rice are excellent choices for main dishes, while whole-grain flours—whether for baking or durum wheat pasta—offer superior nutritional value. Grains and rice can be pre-cooked (lasting up to 4 days refrigerated) or simmered in flavorful vegetable broth to enhance taste. Before cooking, grains should be thoroughly rinsed under cold water to remove any impurities.
