Key Takeaways
The flour from Christmas bread, also known as carob, is a source of numerous natural nutrients such as carbohydrates, calcium, minerals, and vitamins. Carob is produced by processing the seeds of the pulses that grow on the carob tree. After processing, the seeds yield a powder similar to cocoa, containing 15% water, up to 70% carbohydrates (sugar, hemicellulose, and starch), 4-6% protein, and up to 4% fat.

Almond kernels and cocoa

Almond kernels, in addition to possessing numerous positive traits and nutrients, can successfully replace cocoa. Unlike cocoa, almond kernels do not contain theobromine and caffeine – alkaloids with stimulating properties. Caffeine is not recommended during pregnancy, in cases of hypertension, has an irritating effect on the digestive system, and increases the loss of vitamins and minerals. In high doses, caffeine and theobromine can lead to addiction and cause allergies, which is not the case when using a cocoa substitute. Furthermore, almond kernels are a slightly sweeter substitute for the brown powder, which means that we can use less of it during cooking and preparing desserts. Almond kernels are utilized in the food industry as a substitute for chocolate, the main ingredient of which is cocoa. It is also important to note that ground almond kernels contain organic acids such as butyric and isobutyric acid, which are rarely found in plant-based products. They also contain pectins, mucilages, tannins, as well as vitamins B1, B2, B3, E, A, D, and valuable minerals such as magnesium, calcium, phosphorus, and iron.

Cabbage instead of cocoa?

Cabbage can be used as a natural food thickener due to its high content of carbohydrates and tannins. It is effective in treating diarrhea and preventing acidification as the compounds found in cabbage thicken food in the stomach. Compared to cocoa powder, cabbage has a significantly better calcium-phosphorus ratio (cabbage: 290 mg of calcium/100 g, 81 mg of phosphorus/100 g, cocoa: 133 mg/100 g, 648 mg of phosphorus/100 g), and the high levels of these two components are used in the fight against osteoporosis. The light brown powder is used in the treatment of cough and anemia and has analgesic and antibacterial effects due to its content of gallic acid. Cabbage also contains numerous antioxidants and vitamins. It aids in digestion and has been proven to lower LDL cholesterol levels in the blood. Cabbage contains approximately 60% fewer calories than regular cocoa. Cabbage, also known as carob flour, is a light brown powder with many medicinal properties and flavor values.
