Sour cherries are consumed in various ways: fresh, frozen, dried, in a jar, in the form of juice or jam. In recent years, the cultivation of sour cherries has significantly increased in Poland. It turns out that in 2012 our country was the world leader in the production of sour cherry fruit, obtaining a quantity of 180,000 tonnes! They grow on trees and possess valuable nutritional properties despite the fact that they are made up of approximately 82% water. They contain a large amount of anthocyanins and phenolic acids in their composition. These acids are largely responsible for their health properties. They are highly valued for their distinctive taste, which is characterized by a subtle acidity. This is caused by the climate of origin. In Poland, this plant develops sweetness during the day, however at night – acidity. It is completely different in Italy or Spain, where the absence of temperature fluctuations leads to greater sweetness of the fruit. It is important that fresh fruits are not consumed with any liquids, especially not with milk or water, as this can cause stomach and intestinal problems (most commonly diarrhea).
