Why do we cry when we cut onions?
So the onion cells contain amino acids that contain sulfur and enzymes. When we cut them, we break them down, and the juice comes out of the onions, where the enzymes activate themselves by breaking down the amino acid. Then, under the influence of chemical reactions, the juice produces 1-sulfopropenyl acid, which in turn quickly turns into the vaporizing S-oxide of thiopropanol. When combined with water (e.g. in the capillary fluid) it produces sulfuric acid. The reaction that occurs in the eye starts neutralizing the acid which is accompanied by the release of a large amount of water, which is sulfurization.
