Remnants after holidays: meat, sausages, processed meat

During holidays such as Easter, large quantities of processed meats, sausages, and baked or cooked meats are often prepared. These types of products can be used in many ways. Baked meat is ideal as an ingredient for sandwiches, but if there is too much, it can be cut into cubes and added to a salad or tortilla. Another solution is to prepare a sauce (e.g. mushroom sauce) and gently simmer it in thin slices of baked meat – it is a great dietary supplement. The meat can also be used in a machine and made into a filling for strawberries, pancakes, herbs, pies, or pastries. However, if time or ideas are lacking, it is worth remembering that baked meat or pâté can be frozen without any problems and later thought about their use. Processed meats are excellent as a side dish for toast, omelettes, scrambled eggs, pizza, salads, or savory pies. Although baked meat is resistant to spoilage, processed meats – especially poultry – are less so. Therefore, before reusing them, it is necessary to check if they are still suitable for consumption. White sausage is an essential product for Easter. If any is left after the holiday feast, it can be used to prepare soups such as sauerkraut, sorrel, or horseradish. It is also a good choice as a side dish for vegetable casserole, lecho, scrambled eggs, or risotto. Another option is to season it and bake it in the oven – it will then get a delicious crispy crust. A horseradish or mustard sauce can also be prepared and served for lunch with potatoes and salad.

The recipe for rice in various ways with white pork sausage

Ingredients: 1/2 cup of risotto rice, white pork sausage (can be cooked, roasted, fried), 1/2 package of mushrooms, 2 onions, 4 teaspoons of parmesan, 1 1/2 teaspoons of olive oil, 1 cup of vegetable broth, 2 cloves of garlic, spices: sage, pepper. Preparation: 1. Cut the onion and sausage into cubes, press the garlic through the press, finely chop or grate the mushrooms. 2. Fry the onion and garlic in oil. 3. After a few minutes, add the sausage and after a while the mushrooms. Fry everything together. 4. Add the rice and mix well. 5. Season with sage and pepper, pour in the broth and simmer until the rice is soft (about 15 minutes). 6. Put the rice on a plate and sprinkle with parmesan.

Holiday leftovers: boiled eggs

Boiled eggs are very versatile and can be used to prepare a variety of delicious dishes. For example, you can create a simple dish made of eggs and chopped dill and enhance its flavor by adding smoked salmon and mushrooms. Boiled eggs can also be used to prepare different soups such as Zurek, White Barsch, Sorrel Soup, or Spinach Soup. Another interesting option is stuffed eggs: the egg should be peeled, the yolk placed in a bowl, beaten and mixed with other flavor enhancers, such as smoked mackerel, finely chopped bell pepper, mayonnaise, yogurt or mustard. This filling can then be used to fill the egg white. Additionally, you can also use leftover eggs to make egg pancakes, which allow for the use of a larger number of eggs. Eggs can also be used in salads - traditional vegetable salad, rice with tuna or fresh green on a spinach base with additional salmon. Eggs can also be served as a side dish to a meal - in this case, it is worth preparing a parsley or mustard sauce.

Advice on eggs filled with salmon

Ingredients: 4 hard-boiled eggs, 100 g smoked salmon, 1⁄2 ripe avocado, 2 tablespoons Greek yogurt, a few sprigs of dill for decoration. Preparation: 1. Peel the previously cooked eggs, cut them in half, and carefully remove the yolks. 2. In a bowl, mash the yolks with a fork, add the avocado flesh, Greek yogurt, diced smoked salmon, and dill. 3. Mix everything thoroughly to obtain a homogeneous mass, and then use it to fill the egg white halves. 4. Finally, decorate each egg with a few sprigs of dill.

Christmas leftovers – confectionery products

Baked goods that have lost their freshness can be well dried and ground or grated to make breadcrumbs. They can also be soaked in milk and used to make minced meatballs or patties. Another use for Christmas baked goods is toasted croutons, which can later be added to a soup or salad.

Recipe for crispy, baked herbal crunchy bread bites

Ingredients: – 3 pieces of crunchy bread, – 1½ tablespoons of olive oil, – spices: basil, garlic, sweet pepper or spicy. Instructions: 1. Break the bread into smaller pieces and mix with spices and oil. 2. The bread can be prepared in two ways: – by placing it in an oven preheated to 150°C and baking for 15 minutes, then turning the bread onto the other side and baking for another 15 minutes, – frying in a pan for about 5 minutes (until golden), stirring frequently to prevent burning. 3. It is best to store the bread in a glass container. It can be used as a side dish for soups, salads or as a snack instead of chips.

The surviving vegetables after the holidays

From rice vegetables, after adding several necessary ingredients, one can prepare a classic vegetable salad. Tomato slices that no longer look fresh can be added to an egg roll, omelette or toast, while cucumber slices can be cut even smaller and used in creamy pastes or tzatziki sauce. Other vegetables can be used to prepare soups, vegetable casseroles, lecho or salads. They can also be baked (e.g. bell pepper, beetroot, carrot) and used as an ingredient in spreads on bread.

Recipe for beetroot purée and feta cheese

Ingredients: - a large beetroot (cooked, baked or grated), - 1/4 pack of feta cheese, - 1.5 tablespoons of olive oil, - spices: garlic, pepper, parsley. Preparation1. Blend the beetroot to a smooth consistency with olive oil and spices. 2. Incorporate finely crumbled feta cheese. 3. Spread the purée on bread, waffles or tortillas and sprinkle with parsley.

Fruit remnants from the festivities

Depending on the freshness of the fruit, various snacks can be prepared: cocktails, shakes, omelets, pancakes, cookies. They can also be used for fruit skewers, salads, or as an addition to your favorite yogurt. Fruits such as apples, pears, or bananas can be sliced and baked in the oven with cinnamon and breadcrumbs – an easy and delicious dish.

The recipe for a multi-fruit smoothie

Required ingredients: a banana, an apple, an orange, a portion of spinach, a glass of water. Preparation steps: 1. Remove the peel and cut each fruit into smaller pieces. 2. Add spinach and water to the mixture. 3. Use a blender to mix all the ingredients.

Christmas leftovers - cake

The cake without the addition of creams, whipped cream or jelly can be easily frozen. It is advisable to pack it in a container to prevent the odors from passing through the products that are in the freezer. The yeast dough can be easily refreshed: just sprinkle it with a brush (e.g., silicone) with a small amount of milk and put it in the oven for a few minutes – it will be difficult to distinguish it from the freshly prepared. Most cakes, even those with ferment, can be used to prepare bajaderki. These are round cookies that are made from the remains of other cakes and additives (nuts, coconut flakes, chocolate, milk, dried fruit, or alcohol). In fact, the only limitation in preparing bajaderka is imagination. Therefore, it is worth adding favorite ingredients and preparing an interesting dessert.

The recipe for coconut delights

Components: – a few chunks of cake (e.g. yeast, babka, mazurek), – 1⁄4 piece of butter, – 6 tablespoons of milk, – 3 tablespoons of applesauce, – 3 teaspoons of honey, – 3 teaspoons of coconut flakes, – a few drops of almond extract. Preparation: 1. In a vessel, melt the butter, add milk, honey, and almond extract. 2. Add the chopped cake chunks to the mixture. 3. Mix well and let cool. Add the applesauce. 4. Place the mixture in the refrigerator for at least an hour. 5. From the chilled mass, form small balls and roll them in coconut flakes. 6. Store the balls in a glass container in the refrigerator.

Summary

To avoid excess food after the Easter holidays, it is advisable to prepare a meal plan in advance. However, if there are any leftovers, they can be used to prepare other delicious dishes. Most ready meals can be frozen, but remember not to freeze products that have already been frozen again. Easter cakes, cream or jelly and mayonnaise salads are also not suitable for freezing. Another way to deal with Easter leftovers is to share them with family, neighbors or those in need. The most important thing is to maintain reason and moderation in Easter preparations, thus avoiding food waste, overeating, or indigestion, and being able to enjoy good health and time spent with loved ones.
