Lingonberry (Vaccinium vitis-idaea): A Comprehensive Profile of the Forest Berry
Lingonberry – health characteristics and bioactive properties
Belly blueberry is the recipe
The lingonberry / cowberry (Vaccinium vitis-idaea) is highly versatile in both folk herbalism and gourmet culinary applications. Dried fruits and leaves can be brewed into astringent urinary-support infusions, while freshly pressed lingonberry juice pairs exceptionally well with apple or carrot juice. Owing to its rich concentration of proanthocyanidins, resveratrol, arbutin, and natural organic acids (particularly benzoic acid), lingonberry preserves enjoy extraordinary natural shelf stability without artificial preservatives.
With its vibrant, pleasantly tart profile, lingonberry sauce serves as the quintessential condiment for roasted game, poultry, patés, and grilled cheeses (such as Camembert or halloumi), while sweetened jams elevate pancakes and pastries. Below are three classic, nutritionally sound recipes:
1. Lingonberry Jam with Pears and Apples
Ingredients: 1 kg fresh lingonberries, 0.5 kg ripe pears, 0.5 kg apples, 1 tbsp fresh lemon juice, 1 cup water, 3 tbsp candied orange peel, 3 whole cloves, 400 g raw cane sugar (or xylitol).
Preparation: Rinse and drain lingonberries. Peel, core, and dice pears and apples. In a saucepan, simmer water, sugar, and lemon juice. Add diced pears and simmer for 10 minutes until translucent. Introduce diced apples and lingonberries. Simmer gently over low heat for approximately 30 minutes, stirring intermittently until the jam thickens. Stir in cloves and orange peel in the final minutes. Ladle hot jam into sterilized glass jars, seal tightly, and invert until completely cooled.
2. Tart Lingonberry & Antonovka Relish for Roasted Meats
Ingredients: 2 kg lingonberries, 1.5 kg tart apples (such as Antonovka or Granny Smith), 700 g sugar, 1 cup water.
Preparation: Wash and drain berries. Bring water and sugar to a rolling boil in an enameled pot. Add lingonberries and simmer on low heat for 15 minutes. Add peeled, diced tart apples. Simmer for an additional 15 minutes until tender yet retaining textural integrity. Spoon boiling mixture into jars and pasteurize in a hot water bath for 10 minutes. This relish provides an exquisite acidic counterpoint to rich roasted meats and cheeses.
3. Classic Traditional Lingonberry Preserves
Ingredients: 1 kg lingonberries, 500 g sugar, 1 cup water.
Preparation: Blanch cleaned berries in boiling water for 2 minutes, then plunge immediately into ice water to temper excessive bitterness. Dissolve sugar in water over medium heat to create a hot syrup. Pour over berries and gently simmer on low for 35–40 minutes until glistening and syrupy. Jar immediately, seal hermetically, and wrap in a warm blanket to cool slowly.
