Potato allergy is rare but documented, primarily to patatin (major storage protein) and lipid transfer proteins (LTPs). Reactions include contact dermatitis, asthma, or anaphylaxis. Cross-reacts with latex (Hevein-like proteins) in Latex-Fruit Syndrome.
