Wash the carrots and cut them into slices.

Heat the vegetable stock in a pot, add the carrots and cook until al dente.
Remove half (1/2) of the carrots from the pot.
Leave the other half in the pot and puree with a hand blender.
Return the previously removed carrots to the pot.

Now add the cream to the soup.
Season it with erythritol, salt and pepper to taste.
