"Unattractive food", also known as "ugly food", refers to food products that do not meet the aesthetic requirements imposed by the market. Despite the fact that their taste and nutritional value are often identical to their ideal counterparts, they end up in the garbage, contributing to the growing problem of food waste. Therefore, it is worth examining the consequences of this situation and considering ways to reduce the negative effects of food waste.

Excessive loss of food products is one of the most critical challenges of the modern world, both in the ecological and social context. According to the data from the Food and Agriculture Organization of the United Nations (FAO), more than one-third of all food products produced globally are excessively wasted. It is more than a billion tonnes per year that do not reach their intended target, while nearly 800 million people worldwide experience hunger. This disparity shows the significant contradictions in the current food system.

Impacts of food waste

Food waste presents a significant challenge with far-reaching consequences for both the environment and the economy. This phenomenon results in significant environmental impacts, including key greenhouse gas emissions. Food production, which is never consumed, generates 8-10% of global CO2 emissions. Additionally, this process is associated with enormous water consumption. It is estimated that 250 trillion litres of water is used to produce wasteful food annually, equivalent to three times the annual flow of one of the world's largest rivers (Marston L. T. et al. 2021). Another important impact is the overuse of natural resources. Food production that ends up in the trash requires enormous amounts of arable land, energy, and fertilizers. Deforestation, drainage of wetlands, and intensive use of resources lead to degradation of ecosystems, loss of biodiversity, and exacerbation of problems related to environmental pollution. This, in turn, has long-term consequences for the entire planet, destabilizing natural processes in nature. Economically, food waste translates into substantial financial losses. The global cost of discarded food reaches 1 trillion dollars annually, which constitutes a significant burden for economies around the world. In the European Union, losses are estimated at 143 billion euros per year.

Causes of less appealing food products

This is the outcome of a complex interplay of natural, social, and economic factors. First and foremost, nature does not produce agricultural products uniformly. Biodiversity, soil, climatic, and genetic conditions result in crops often being different in shape, size, or color. Additionally, external factors such as drought, rainfall, precipitation, or temperature fluctuations can lead to irregular shapes, stains, or other defects. Mechanical damage to crops, transport, or storage also affects the appearance of products that are often less attractive or less desirable in the eyes of consumers. However, these products are not attractive on the market and do not require the sale of products from key markets to other markets. To avoid the necessity of fulfilling additional conditions, such as the use of raw materials and materials, which can often have a significant impact on the market and the production of these products.

Owing to numerous endeavors, groundbreaking technological solutions, and shifts in the culinary sector, an increasing number of individuals are becoming aware of the benefits of so-called unappealing food.

The mitigation of food waste can be achieved through mobile applications that allow for the purchase of unsold meals from dining establishments and food products from stores at reasonable prices. Through this, even so-called "ugly food", which could have been wasted, finds new owners.

Unfortunately appearing food in eateries and catering establishments

Eateries all over the world increasingly include unattractive food products in their offerings, emphasizing their value and taste. Many locations promote dishes made with raw materials that do not meet beauty standards, but are full-value. In Poland, more and more restaurants and catering establishments decide to cooperate with local farmers who supply them with products of an atypical appearance. This not only supports the local economy, but also contributes to reducing the problem of food waste.

Social educational campaigns focused on food waste

Consumer education plays a crucial role in promoting the trend of ugly food. Non-governmental organizations conduct campaigns to raise awareness about the problem of food waste and encourage the choice of non-standard-looking products. In Poland, there are also initiatives such as the "Don't waste food" campaign of the Food Bank Foundation, which also promotes the use of ugly food.

Distinct areas in supermarkets and retail stores

Supermarkets and retail stores are also discovering the potential of food items that are referred to as "ugly". Many of them are introducing specific shelves or sections that enable customers to purchase non-standard-looking vegetables and fruits at discounted prices. Supporting the trend of "ugly food" is far more than just a passing fad – it is a genuine step towards a sustainable future. Each one of us can become a part of this change by taking simple yet meaningful actions. These seemingly small steps have a substantial impact on the environment, economy, and society – contributing to waste reduction, conservation of natural resources, and the creation of a more conscious and responsible community.
