Among the myriad of fungal species, the shiitake mushroom—originating from China but now widely available in Polish grocery stores—stands out due to its remarkable concentration of bioactive compounds. This unique composition renders shiitake not merely a flavorful ingredient but also a highly functional addition to daily meals. A clinical trial involving 52 participants who consumed between 5 and 10 grams of dried shiitake mushrooms daily over a four-week period demonstrated a marked increase in the activity of immune cells—specifically γδ-T lymphocytes and NK-T cells—which directly enhances the body’s defensive capabilities. Furthermore, regular consumption of these mushrooms has been associated with a reduced likelihood of developing metabolic disorders such as insulin resistance and hypertension, while their polysaccharide content exhibits documented antitumor properties, suggesting a potential role in cancer prevention.
