A clinical trial involving 52 participants who consumed between 5 and 10 grams of dried shiitake mushrooms daily over a four-week period demonstrated a marked increase in the activity of immune cells—specifically γδ-T lymphocytes and NK-T cells—which directly enhances the body’s defensive capabilities. Furthermore, regular consumption of these mushrooms has been associated with a reduced likelihood of developing metabolic disorders such as insulin resistance and hypertension, while their polysaccharide content exhibits documented antitumor properties, suggesting a potential role in cancer prevention.
