Rice noodles are a product that is made from rice flour and water. The process involves a series of long-term steps and may include additional ingredients such as corn starch, which aim to improve the flavor or texture of the product (C. Li et al. 2021). The quality of rice noodles depends not only on the quality of the rice used, but also on the way it is processed. Rice noodles are naturally colorless and have a neutral taste and smell, although there are also versions in other colors that do not affect the taste, but aim to attract the attention of customers. Due to the fast pace of life, rice noodles are increasingly chosen by consumers, and on the market, there are products that only need to be poured with boiling water and left to stand for a while. Rice noodles are also very popular among people following a gluten-free diet, as they do not contain gluten.
The nutritional value of rice noodles
Rice noodles primarily serve as a source of carbohydrates (in 100 g of the product there are < 80 g of sugars). They are easily digestible, making them an excellent choice for individuals with digestive issues. Besides carbohydrates, they contain certain amounts of protein, while the fat content is extremely low. It is important to emphasize that rice noodles are highly caloric, which is particularly significant for those following a reducing diet and battling obesity. Rice noodles provide certain vitamins, especially those from group B. They are also a source of minerals such as potassium, calcium, magnesium, and phosphorus.
Recipes utilizing rice macaroni
Preparation time: 45 minutes Ingredients (per serving): rice macaroni - portion (40 g), coconut milk - 1⁄2 cup (120 ml), vegetable broth - cup (240 ml), olive oil - teaspoon (5 g), chicken breast - serving (80 g), onion - plaster (15 g), red bell pepper - 1⁄2 piece (120 g), carrots - piece (45 g), soy sauce - 2 teaspoons (20 ml), curry - 1⁄4 teaspoon (2 g), pepper - pinch (0, 2 g), salt - pinch (0, 2 g). Preparation: 1. Prepare the rice macaroni in accordance with the instructions on the packaging. 2. Clean the chicken breast and rinse it. 3. Cut the carrots, bell pepper, chicken breast and onion into cubes. 4. Pour the olive oil into a pot and sauté the onions. 5. Add the meat and sauté it for about 10 minutes. 6. Add the vegetables, spices, and broth and cook for 15 minutes. 7. At the end, add the soy sauce and coconut milk. 8. Place the finished macaroni on a plate and pour the soup over it. Preparation time: 45 minutes Ingredients (per serving): rice noodles portion (50 g), chicken breast serving (100 g), onion rings plaster (15 g), garlic cloves teeth (5 g), olive oil teaspoon (5g), spinach leaves 2 handfuls (50g), dried tomatoes 3 pieces (21 g), pumpkin seeds teaspoon (5 gr), salt pinch (0.2 g), pepper pinch (0,2 g).
A salad with rice noodles and tofu
Preparation time: 45 minutes Ingredients (per serving): rice noodles serving (50 g), tofu 1⁄2 block (90 g), olive oil teaspoon (5 g), red bell pepper 1⁄2 piece (120 g), pineapple portion (100 g), canned corn 3 tablespoons (45 g), soy sauce spoon (10 ml), salt pinch (0.2 g), curry pinch (0.2 g), pepper pinch (0.2 g). Preparation: 1. Prepare rice noodles according to package instructions. Set aside to cool. 2. Cut tofu into cubes, marinate in olive oil, soy sauce, salt, and curry. Put in the refrigerator for 20 minutes. 3. Peel and cut pineapple into small pieces, drain corn. Wash bell pepper, remove seeds, and cut into cubes. 4. Fry tofu in a pan until golden brown. 5. Preparation time: 20 minutes Ingredients (per 1 serving): rice noodles - portion (40 g), natural yogurt - 1/2 piece (75 g), apple - piece (200 g), curd cheese - 2 slices (60 g), honey - spoonful (12 g), walnuts - 3 pieces (12 g), cinnamon - 1/2 spoon (2 g). Method: 1. Prepare rice noodles according to package instructions. 2. Grate the apple on a grater with medium holes. 3. Combine rice noodles with natural yogurt, adding apple and crumbled curd cheese. 4. Season with cinnamon, add honey and chopped walnuts.
