The summer season offers an abundance of fresh and healthy vegetables. Today, we present a recipe for a cucumber that has been stuffed with pulp and vegetables, which can serve as an integral part of a meal or a standalone main course.
Necessary components for lunch
To prepare this lunch, we need: - 1 large cucumber, - 1/4 red bell pepper, - 1/2 small onion, - 1 glass of natural yogurt with 0% fat, - 200 grams of lean dairy products, - a handful of kidney beans, - a handful of sunflower seeds, - spices: Himalayan salt, black pepper, oregano. The cucumber should be cut in half lengthwise, and the inside scooped out. The bell pepper and onion are cut into cubes. The dairy products and yogurt are mixed together and the spices are added. Meanwhile, the grill pan/oven should be heated, and the cucumber should be placed in it for about 10-15 minutes (the time can vary depending on the desired softness of the vegetable). In a separate pan without oil, the sunflower seeds and beans are fried until they turn a golden color. The ingredients are placed on the cucumber in the following order: dairy products, vegetables, and seeds.
