The potato originates from the distant regions of Central and South America, and it was only mid-16th century that brought its popularity to Europe. Initially, it was not utilized as food. It was considered an ornamental plant, hence it was found in botanical gardens, where its aesthetic values were appreciated. It was only after about 200 years that its flavorful and nutritious qualities began to be valued, and the humble potato saved millions of starving people in the poorest countries of Europe!

Potatoes are an exceptionally nutritious dietary component, providing essential vitamins and minerals. Contrary to popular belief, they are not calorie-dense and offer high satiety. Their nutritional value stems from their starch, protein, and essential vitamins and minerals, with minimal anti-nutritional compounds. Both hot and cooled potatoes are recommended for consumption. Hot potatoes supply energy, while cold potatoes contain resistant starch, which functions as dietary fiber and exhibits prebiotic properties. Additionally, they are a superb protein source, with an amino acid profile comparable to soy protein and chicken egg protein. Potatoes are rich in minerals, particularly potassium, which regulates blood pressure and muscle function, followed by magnesium, phosphorus, iron, zinc, calcium, and copper. They support heart health, have alkalizing effects, and provide B vitamins, notably thiamin and niacin. With 11 mg of vitamin C per 100 g, they serve as a primary source of this nutrient in the Polish diet. Furthermore, they contain phenolic acids, potent antioxidants that exhibit anti-cancer properties and help prevent inflammation and neurodegenerative diseases.

Potatoes play a pivotal role in Polish cuisine, where they must undergo thermal processing before consumption. They can be boiled, baked, or fried, serving as popular lunch accompaniments in the form of cooked tubers or purees. When cut into sticks and baked/fried as fries, they are particularly favored by children. Homemade potato chips are a healthier alternative to store-bought versions if excess fat is drained. Potatoes are used to prepare potato pancakes, Silesian dumplings, and fillings for Russian pirogues. In Wielkopolska cuisine, Gzik, a dish made from quark and potatoes, is well-known. Boiled potatoes can be utilized for potato salad, vegetable salad, or herring salad and for potato casserole. Potatoes are referred to as the 'perfectly designed vegetable by nature,' as they grow in a natural 'package' that preserves their freshness and usability over an extended period.
