Potatoes rank fourth among the most popular cultivated plants worldwide and are an important source of energy and nutrients and bioactive ingredients in the diet. What are their characteristics and what are their uses? Under what conditions can they be beneficial?
Potato tubers
Potato tubers (Solanum tuberosum L.) belong to the nightshade family (Solanaceae). Originating in the Americas, they have been cultivated for over 4,000 years. Introduced to Europe in the mid-16th century, they initially served as ornamental plants in botanical gardens. It was not until more than two centuries later that their culinary merits were recognized by aristocratic circles. Over time, the cultivation of potato tubers became widespread and became the primary food source for the poorest social classes.
Characteristics of potato tubers
The biochemical composition and biological quality of substances present in potato tubers determine their nutritional value and physiological properties. These include starch, protein, dietary fiber, trace minerals (potassium, magnesium, iron, calcium, phosphorus), B-complex vitamins, C, K, and PP, organic acids, and polyphenolic compounds. Contrary to common perception, potatoes are low in calories (75 kcal/100 g) and easily digestible. From a nutritional standpoint, potato protein represents the most significant nutrient, supplying essential exogenous amino acids. Fiber enhances digestive function, while vitamin C acts as a potent antioxidant. Additionally, tubers contain polyphenols, flavonoids, and carotenoids, which exhibit antioxidant and antibacterial effects. Notably, the highest concentrations of vitamins and minerals are found in the tuber's outer layer.

Freshly extracted potato juice has been employed for centuries in folk medicine as a natural aid for digestion. It was only in recent decades that researchers began systematically studying its therapeutic properties and potential health risks.

Potato compresses, prepared from grated or whole potatoes, serve as an effective remedy for tired eyes and headaches – simply apply them to the forehead or chest. Fresh, starchy potatoes can also aid in alleviating pain and preventing blister formation in cases of skin burns, including sunburn. The bandages should be replaced when they become excessively warm. Moreover, such natural compresses prove beneficial for treating chapped skin, hard-to-heal wounds, rheumatic pains, bruises, and frostbite.

It is noteworthy that potatoes are not only a staple in the Polish diet but also offer numerous health benefits without contributing to weight gain, contrary to popular belief. For centuries, they have been used in traditional medicine to relieve hemorrhoids, burns, headaches, and other ailments.
