There is nothing wrong with this, for they boast numerous valuable attributes... Unfortunately, these can easily be lost if potatoes are accompanied by fatty sauces and high-calorie additions.
Not much about the history of potatoes
The potato belongs to the family of nightshade plants. Its cradle of cultivation is in South America - Peru, Chile and Bolivia. Christopher Columbus was credited with introducing the potato to Europe. In Europe, this plant was known very late, as estimated only in the 16th century. Initially, it was considered an ornamental plant, grown in botanical gardens. In Poland, potatoes appeared thanks to King John III Sobieski. The potato tubers were brought from the Viennese expedition as a gift for Queen Marie Casimire. Potatoes have been highly valued worldwide and have become the basis of the diet in many regions. Thanks to potatoes, millions of people have been saved from starvation death, which is not surprising that they have been recognized as a holiday. The year 2008 was declared by the United Nations as the International Year of the Potato. There are many varieties of this plant, and for the consumer, it is important that potatoes are available all year round and can maintain their freshness for a long time if stored properly. Research shows that when choosing, consumers are guided mainly by the flouriness of the potato, taste, lack of damage, and culinary purpose.
Primary benefits of consuming potatoes
Potatoes are a commonly known plant in Polish households, forming the foundation of the diet. The consumption of potatoes in the years 2010-2011 amounted to approximately 112 kg per year per inhabitant. Contrary to popular belief that potatoes are high-calorie products, bulbs of these plants contain few calories. In cooked form, they can be used in light-healthy diets, applied among others in inflammatory conditions of the gastrointestinal tract, in over-sensitivity of the large intestine, in older people or after surgical procedures. Potatoes are composed mainly of starch, protein, fiber, vitamins, especially vitamin C, and mineral components. These plants are characterized by a low content of harmful substances such as glycoalkaloids, nitrates, and pesticide residues. The energy value of potatoes is approximately 50-80 kcal per 100 g of product, compared to 100 g of white rice, which provides about 345 kcal, 100 g of pearl barley about 335 kcal, 150 g of apple about 75 kcal. The caloric content of meals containing potatoes increases through their culinary processing, such as deep-frying, adding butter after boiling, or consuming them in the form of purée. Potatoes also help regulate digestion, support digestion, and improve the functioning of the circulatory system. In folk medicine, potatoes are used as a means of soothing burns, an anti-inflammatory agent, and a skin-tightening agent.

Potatoes, like many other dietary components, are the subject of discussions and controversies. Let's examine the most important claims about potatoes: – they are high in calories – this is actually the most common myth about this vegetable. It's worth noting that 100 g of potato is only about 50–80 kcal! They can be a great ingredient in a low-calorie diet, as they keep thirst at bay for a long time; – they are not suitable for everyone – unfortunately, the potassium content in potatoes means that people with kidney problems should avoid them; – potatoes are safe to eat, but be cautious of solanine, which can be harmful in large quantities; – during cooking, they lose valuable nutrients – the best methods that allow for the retention of valuable components are baking or cooking with skin and avoiding long cutting and cooking; – food producers often manipulate consumer choices, so be cautious of processed potato products, such as fries and chips.
