Ingredients: Fresh or frozen strawberries 500 g, sugar, e.g. xylitol, 50 g; gelatin 12 g; lemon juice 18 g; mint leaves for decoration (optional) Method of preparation: We wash the fruit, and in the case of fresh strawberries, we remove the stems. Then we blend the fruit into a puree. We can strain the obtained puree through a sieve to obtain a smooth consistency (this is not necessary). Next, we add the remaining ingredients to the puree: sugar, gelatin, and lemon juice. We mix everything well. Then we pour the mixture into molds or cups and let it cool slightly. After cooling, we store the jelly in the refrigerator for several hours. We can decorate the jelly with mint leaves. Nutritional value: 4 servings: – calories 331 kcal, – protein 13.7 g, – fat 2 g, – carbohydrates 80.5 g, – fiber 9.1 g. Gelatin and its properties: Gelatin is a mixture of proteins and peptides. It is obtained through partial hydrolysis of collagen found in certain parts of animal bodies, specifically in the skin, bones, and cartilage of cattle and pigs. Gelatin has a number of beneficial effects on our body, such as: – it has a positive effect on connective tissue; – strengthens hair and nails; – increases skin firmness; – has an anti-inflammatory effect; – relieves joint and muscle pain; – increases tendon elasticity; – supports digestion; – has a positive effect on appetite control. Gelatin is an important component of the diet for active people who want to maintain healthy joints. Collagen, which is the main component of gelatin, is found mainly in tendons, joints, ligaments, and intervertebral discs, also known as discs. However, it is important to note that excessive consumption of gelatin is not recommended, as there is a lack of convincing evidence that a higher intake of gelatin-rich products will lead to faster regeneration of tendons and joints. Furthermore, it is important to also ensure an adequate intake of vitamin C in the diet to properly utilize collagen.
