Kebab is a traditional dish of Turkish cuisine, consisting of meat, vegetable salad, sauces, and bread. This popular snack has gained popularity among Poles due to its taste and affordable prices. However, in many cases, instead of focusing on the quality of the ingredients, the decision is made based on their low cost, which can affect the quality and nutritional value of the dish. In many food establishments, the cheapest types of meat, cheap vegetable oils, and products made from refined flour are used. Additionally, french fries are often added, which can be high in fat and salt.

Nutritious components content in kebab

Kebab is a food with a high nutritional value, providing protein, fat, and carbohydrates. However, it should be noted that kebab is consumed in pieces and despite its caloric content in 100 g not being the highest (for example, 100 g of walnuts has 666 kcal), one kebab contains about 900 kcal. The nutritional components in 100 g of the product are: – calories: 195 kcal, – protein: 8.2 g, – fat: 9.7 g, – carbohydrates: 19.8 g, – fiber: 1.1 g.

It's sodium chloride

Kebab consists of numerous components that contain sodium chloride, which can lead to an excessive intake of sodium. Both meat, bread, and sauces contain this component that serves as a natural preservative. It enhances the taste and prolongs the storage time. Kebab is a product with a high sodium content. Unfortunately, an excess of this element can result in high blood pressure, strokes, heart attacks, and obesity. Research has also shown that it can contribute to the development of tumors (stomach cancer).

This component is fat

In this traditional Turkish dish, fat constitutes a significant portion (over 40%), which can have a harmful impact on the human body. Given that meat is an ingredient in kebabs, it is rich in fractions of fatty acids. Furthermore, the sauces contain vegetable fats, such as palm oil, which is considered one of the least healthy. Saturated fats can have a harmful effect on the cardiovascular system and contribute to the development of cancers, such as colon cancer.

Heavily processed meat - harmful components in kebab

Kebab is a dish that typically consists of lamb, beef, or chicken. However, it is important to emphasize that in most cases, these are mixtures of low-quality meats that have been previously processed and reheated on the spot. Such mixtures contain large amounts of salt and saturated fats. They also often contain flavor enhancers and preservatives. A study published in Revue Scientifique et Technique in 2018 confirmed that heavily processed red meat contributes to the development of cancer and increases the risk of death.

Healthful alternative

Vegetarian and vegan types of kebabs have also emerged in the market. They are abundant in vegetables, and the protein is delivered in the form of balls or cutlets from legume or mushroom plants. Such dishes can be considered a good source of vitamins and necessary components, provided that other additives are also of high quality. Attention should be paid to the composition of the sauce (it may also contain palm oil) and the bread – it is best to choose those with whole grain.

Merely a smidgeon of practice

It is not wise to anticipate a healthy and nutrient-rich kebab from a nearby stall for 20 PLN. The owners of such establishments focus on mass sales at the lowest possible cost. Therefore, it is worthwhile to invest some time and prepare similar dishes yourself. At this price, you can make kebab with chicken and fresh vegetables wrapped in a whole grain tortilla and served with yogurt and garlic sauce. Such a meal will undoubtedly provide a wealth of vitamins and micronutrients as well as fiber.
