The high content of polyunsaturated fatty acids (oil and linoleic) indicates that almond oil should not be used for frying and heat treatment, as during this process the unsaturated acids will be oxidized in favour of the less health-friendly saturated fatty acid. It is useful to use almond oils for preparing a healthy and hydrated salad dressing, it is also great for meat, especially lean fish and poultry. The oil is sweetly mixed with sweetened ingredients. Almond oil is an important ingredient in the production of good quality brands.
