Nachos are a salty treat, the chief ingredient of which is corn flour. In Poland, their popularity is consistently on the rise. What lies behind these savory delights?

Nachos - the constituents

According to the rules, nachos should include cornmeal, oil, and salt. Nevertheless, certain manufacturers enrich their products with a wide array of other components, including dried milk, monosodium glutamate (E621), disodium guanylate (E627), and disodium inosinate (E631) maltodextrin, cheese powder, onion powder, garlic powder, flavours, citric acid (E330), palm oil, spices, and herbs.

Nutrient composition of Nachos

Nachos are a high-calorie product – 100 g of this product provides 350 kcal. A standard serving of nachos weighs 80 g, while a handful of this snack is 30 g. They primarily consist of carbohydrates and fats. The nutrient composition of a serving of nachos (80 g) is as follows: energy value: 280 kcal, protein: 3.5 g, fat: 17.2 g, including saturated fats: 1.7 g, monounsaturated fats: 11.2 g, polyunsaturated fats: 4 g, trans isomers: 0.05 g, total carbohydrates: 27.9 g, including sugars: 1.7 g, dietary fiber: 2.6 g, cholesterol: 2 g.

Nutritional components in nachos, such as vitamins and minerals

Nachos contains B-group vitamins such as vitamin B1 (0.1 g/100 g), vitamin B2 (0.1 mg/100 g), vitamin B3 (0.6 mg/100 g), and vitamin B6 (0.2 mg/100 g), as well as fat-soluble vitamins like vitamin A (5 µg/100 g), vitamin E (4 mg/100 g), and vitamin K (7.5 µg/100 g). Moreover, this salty snack also provides some mineral components, such as calcium (63 mg/100 g), iron (0.8 mg/100 g), magnesium (42 mg/100 g), phosphorus (198 mg/100 g), potassium (362 mg/100 g), sodium (313 mg/100 g), zinc (0.8 mg/100 g), selenium (8.6 µg/100 g), copper (0.1 mg/100 g), and manganese (0.1 mg/100 g).

Nachos - food of low nutritional quality

Nachos are regarded as food of low nutritional quality, commonly referred to as "junk food". They are high in calories and contain few nutrients. They contain significant amounts of saturated fatty acids and trans isomers. Additionally, they contain small amounts of fiber, vitamins, and minerals. Frequent consumption of this type of food is associated with a rapid increase in body fat and the development of overweight and obesity issues.

Nachos as a source of trans isomers - a medical analysis

Trans isomers are created due to excessive heating of polyunsaturated fatty acids, which results in detrimental changes in fat structure. They increase the levels of triglycerides and low-density lipoproteins, also known as bad cholesterol, which leads to a decrease in the amount of high-density lipoproteins, or good cholesterol. Consequently, they contribute to an increased risk of cardiovascular diseases. There are also suspicions that trans isomers have a negative impact on fertility and might increase the risk of developing Alzheimer's disease, diabetes, gallstones, and cancer.
