Breton-fashioned beans with chicken constitute an excellent proposal for a high-protein lunch meal that guarantees appropriate satiety.
Fundamental ingredients
– 3/4 cups of mung beans (100 g), – small onion (60 g), – garlic clove, – half a chicken breast (100 g), – 3/4 cups of canned tomatoes (180 g), – tablespoon of rapeseed oil (10 g), – spices: salt, pepper, cumin, sweet paprika, oregano.
The method of preparation
The preparation begins by soaking the beans in water (around 10 hours), it is best to prepare them in the evening so that they are ready in the morning for further processing. After soaking, drain the water and pour over fresh water and lightly salt. Then let it simmer on low heat until it softens: 30-50 minutes. The cooking water is drained. The chicken breast is cut into cubes, lightly salted and fried on both sides in oil. At the end of cooking, add chopped onion and fry it together with the chicken under the lid. In the pot with the cooked beans, add chopped garlic clove, the fried chicken with the onion, and the spices: a little caraway, pepper, sweet paprika, and oregano. Add canned tomatoes and a little water, then cook everything and let it simmer for about 20 minutes under the lid. The beans are ready!
