Juice obtained through the mechanical extraction of fresh apples is commonly classified as "direct" or "unprocessed natural juice," distinguishing it from concentrated variants that undergo water evaporation to reduce volume. This type of juice retains its original liquid form without concentration. The production process involves subjecting mature, unprocessed apples to hydraulic pressing, which separates the liquid from the pulp. To extend shelf life and ensure microbial safety, the juice undergoes pasteurization—a controlled heat treatment where it is heated to no more than 100°C—to neutralize potentially harmful pathogens while preserving heat-sensitive nutrients such as ascorbic acid (vitamin C) and antioxidant polyphenols. The typical expiration period for pasteurized juice is up to twelve months from the date of manufacture. A distinct category, known as "short-shelf-life juices," is also produced through cold-pressing fresh apples but omits pasteurization, thereby retaining maximal flavor and nutritional integrity at the cost of a significantly reduced shelf life—limited to three days post-production.

This technological approach effectively prevents product spoilage, significantly simplifies storage requirements, and lowers expenses associated with transportation and warehousing. The majority of commercially available juices are derived from this intermediate product. To restore it to a ready-to-drink beverage, an equivalent amount of water—matching that removed during concentration—must be reintroduced. The subsequent phase involves the reincorporation of natural flavor compounds and, depending on the formulation, the addition of fruit pulp or purée. Visually, apple juice concentrate appears as a clear liquid whose physicochemical and organoleptic properties closely resemble those of freshly pressed juice. However, it is important to note that the thermal processing leads to partial degradation of vitamins, which are subsequently replenished with synthetic analogs during the juice reconstitution process. While manufacturers assert equivalent nutritional content, cold-pressed juice remains the natural source of these compounds without requiring later supplementation.
