Turkey and mushroom ragout

Preparation steps

Pat the turkey breast dry and cut into pieces.

Peel and finely dice the onions.

Wash the mushrooms, drain them in a colander, and let them drain well. Slice them.

Heat the oil in a large saucepan. Brown the meat vigorously, stirring occasionally.

Add the onions and mushrooms and cook for about 4 minutes. Season with pepper.

Pour in the stock, bring to a boil, and cook for about 10 minutes.

Add the frozen peas to the meat.

Combine the cream and flour, stir into the ragout, and simmer for about 2 minutes.

Season with salt, pepper, and lemon juice.

Drain the rice in a sieve and let it drain well.

Arrange the turkey ragout and rice on plates.

Serve garnished with lemon slices and parsley.


Tip: If there are no children present, you can refine the sauce with a little white wine or white port.
