Preparation steps

Soak the gelatine in a bowl of cold water.

Put the cream in a bowl and beat it with a hand blender until stiff.


Add 3 tablespoons (30g) of erythritol and the vanilla and mix.

Remove the gelatine from the water and place it in a saucepan with 3 tablespoons of water and heat until it has melted.


Add the melted gelatine to the cream and mix.

Pour the mixture into glass bowls and place in the refrigerator for an hour.

Put the berries in a saucepan with the remaining 30 g of erythritol and simmer until the erythritol has melted. Serve the panna cotta on a plate and pour the berries lightly over it.
