Recently, there has been a growing interest in forgotten species of crops. Consumers who want to increase the variety of products consumed are increasingly aware of their nutritional value. One of the species that is slowly returning to favor is the scorpion, also known as the black snake killer.

Skorzonera (Scorzonera hispanica L.) is a plant native to central and southern Europe. In the second half of the 20th century, foreign varieties of blackberry must have arrived in Poland. In natural conditions, it can be found in Spain, France and Portugal. It occurs in two main varieties that differ in the shape of the leaves. In our country, corzonera was not as popular as in Southern Europe.

2. Skorzonera nutritional and health benefits

Skorzonera is a vegetable with a high nutritional value. Like other root vegetables, it also contains high amounts of dietary fiber and vitamins. It can also contain numerous mineral ingredients, such as iron, calcium, phosphorus, magnesium, selenium and chlorine. The roots of corzonera are recommended especially for people with type 2 diabetes. They have a low glycemic index and also contain in their composition insulin a high-value polysaccharide found in the intestines, joints and lower extremities of the body. It also contains mineral reserves. It is a prebiotic substance that increases the function of proteins.

3. Is it even a corsoner? Where to buy and what to pay attention to?

Skorzonera is certainly not a popular vegetable. It's hard to find on the shelves of grocery stores and vegetable shops. To try this vegetable, unfortunately, you have to put in a little effort. The roots of korzonera are the easiest to buy in organic food stores. If there is no such stand in your immediate area, you can use the services of online retailers.

4. It's the culinary recipe

There are few culinary recipes in which the root of the scorpion plays a major role, but it's a vegetable that doesn't require a lot of cooking skills, and it can be cooked, salted, and ready to eat, but if you want to try it in a different way, here are some helpful recipes.

5. A salad of corn and apples

Ingredients: 500 grams of fried parsley, 2 eggs, ?? medium-sized peas, medium-size apple. How to cook the peas in water with the addition of a spoon of sugar and salt spices? 3 tablespoons of natural yoghurt,?? 3 teaspoon of chopped nuts,?? 2 tablesps of pickled peanut butter,?? 1⁄2 lemon juice,?? salt, pepper, sugar to taste.

6. Wine from the harvester

Ingredients: 80 g of freshly chopped ends of young spices, 1 litre of sparkling white wine and 100 ml of 70% spirits. How to prepare The roots of the sparkler are thoroughly cleaned, washed and blended to a smooth mass. The resulting brine is flooded with spirits mixed with 1⁄2 of the prepared amount of white wine. It is best to leave for two hours before mixing it properly. After that time, pour the rest of the wine, dissolve it and store it for a week in a warmer place.
