As spring begins, young vegetables begin to appear in stores... do we even often wonder if it's worth reaching for them during this time?

1. What are novels?

We refer to fresh vegetables that come on the market in the spring as "new" vegetables, such as lettuce, rare trees, tomatoes, young carrots, cucumbers, smoked onions, raspberries and spices. They are grown in greenhouses where there is appropriate moisture, lighting and temperature for growth. The crop base is a mixture of peat, leafy soil, fertilizers and microelements. This type of crop provides optimal yields and accelerates the ripening period of plants.

2. The nutritional value of newborns

According to the Institute of Food and Nutrition, vegetables and fruits should form the basis of our diet and should be incorporated into every meal of the day. Adequate vegetable consumption is also listed as an essential element in the prevention of many diseases such as obesity, diabetes, cardiovascular disease or cancer. The nutritional value of novel foods is basically similar to the nutritive value of vegetables grown. They contain many vitamins, mineral salts, fiber and other health benefits, including vitamins and minerals.

3. Manufacture in which the value of all the materials used does not exceed 50% of the ex-works price of the product

Nitrogen compounds occur naturally in the environment and our body is able to release excess nitrogen. Too much nitrogen in the human body is, however, associated with a certain danger. They can be reduced to nitrogen compounds, which are, among other things, a major risk factor for metoglobinemia, especially in children, and can therefore cause an adverse effect.

4. How to store novelty items

If we have the option of using organically produced vegetables or getting them from certified sellers, it's also worth remembering to store fresh produce properly, and it is disadvantageous to store vegetables in foil bags, and the moisture produced in these conditions accelerates the negative metabolism of nitrates, and a good option might be to wrap vegetables with a paper glove, or to put a drawer in a refrigerator with parchment.
