Is a gluten-free diet healthy or just fashionable?

Gluten is a fraction of the protein found in the seeds of cereals in wheat (gliadin), rye (hordein) and barley (secalin). It is also often found in oats, contaminated by other cereals. In Poland, certified oats produced in Finland are available.

1. Who's on a gluten-free diet?

A gluten-free diet is recommended for people with celiac disease and gluten allergy. These two disease units differ primarily in the mechanisms that are responsible for causing symptoms. In the case of a glutenallergy, IgE-class antibodies are typical, whereas in celiacs we are dealing with specific antigens against endomyosis and tissue transglutamine.

2. Non-celebrity hypersensitivity to gluten

Non-cellular gluten sensitivity (NCGS) is a commonly used and widely known term, but so far there is no consensus among doctors and scientists as to its actual existence and possible diagnosis. NCGS can be characterized by the occurrence of certain symptoms (abdominal pain, persistent swelling, sleep disorders, fatigue, diarrhea, headache, muscle, joint, changes in weight, weight loss) several hours or days after ingestion of products containing gluten and its withdrawal after the introduction of a combined diet.

3. Gluten-free diet Prohibited products

On a gluten-free diet, it is contraindicated to consume all products containing gluten and those contaminated with it. It is necessary to exclude all products produced with wheat, rye, barley and oats. Although oats are naturally gluten free grains, they can be heavily contaminated by other cereals, so there should be no gluten in sick people.

4. Gluten-free diet products allowed

Naturally gluten-free cereals include maize, garlic, prosa, rice. A person with celiac disease can eat whole grains, whole flour, whole pasta, whole egg, rice, rice flakes, whole corn, potatoes, tapioca, amaranth, manioc, vegetables and fruits, meat, fish, oils, nuts and seeds. On the contrary, a person with cellulite can consume whole grain, whole wheat, pasta, cereal, rice and rice flour.

5. Is this a gluten-free diet at all?

There is a wide range of foods available on the market that, although they do not contain gluten in their natural form, can be found in gluten, which has been intentionally added because of its technological properties. These are the products that may pose a particular risk to people suffering from celiac disease. Similarly, semolina is nothing more than durum wheat. Below are listed products that can be a source of gluten although this is not necessarily so obvious:

6. It's breakfast

The ingredients are: jar jar of apple and cinnamon 50 g, milk 1.5% 150 ml, ?? apple 80 g, banana 50 g nuts 10 g, cinnamon for flavoring. Rinse the jar with hot water several times so that it is not bitter. Pick the apple and cut it into a small cubes. Boil the milk, add the jar and cut into banana patches. Reduce the flame and cook the whole.

7. It's the second breakfast

Cocktail with spinach, peas and banana Ingredients: Natural yogurt 150 ml, Fresh spinax 25 g, ?? Peas 65 g, Bananas 50 g. Choose the fruit. Then put all the ingredients in a blender and mix to get a smooth mass.

8. Lunch

Ingredients: 30 g of celery, 25 g of carrots, 20 g of parsley, 15 g of vinegar, 70 g of pickled cucumber, 3 g of garlic, 20g of white rice, 30 g. of natural yogurt, 10 g of laurel leaf, 19 g of salt, 1 g of black pepper, 5 g of copper. In the pot, boil the leaves, vegetables and legumes.

9. It's dinner

Fruit salad of oranges, apples and grapes Ingredients: orange 120 g, apple 75 g, green grapes 70 g lemon 10 g. Pick the orange and apple and cut it into smaller pieces. Wash the grapes and cut them in half.

10. Dinner

Red pepper 60 g, olive oil 8 g, salt, black pepper, basil. Wash the chicken, pick it and cut it into cubes. Then put it in a heated pan. Then wash the pepper and cut the bone and also put it on the pan.

11. Omelet

(ingredients for 2 servings) Ingredients: tomatoes 350 g, fresh basil 1⁄2 bunch, ?? fresh chili pepper 1⁄2 piece mozzarella, balls about. 80 g,?? fresh eggs 4 pieces. Tomatoes sliced up and placed in half a bowl. Sliced oil with olive oil and vinegar. Sprinkled with salt and black pepper.
