Tomatoes are the most popular vegetables in Poland. They are used in the production of ketchups, concentrates, sauces, cutters, pastries or juices.They are a treasure trove of vitamins and contain valuable lycopene.

1. The nutritional value

Tomatoes contain only 19 kcal per 100 g, which makes them a great base for low-calorie meals. These vegetables contain high doses of vitamins A, E and C. They are also a source of mineral ingredients such as potassium, phosphorus and calcium. Tomates are about 95% water-based, which helps the body to hydrate. They should be consumed in combination with fats so that vitamins such as A and E have a chance to be absorbed. Tomatoes contain the bioactive compounds carotenoids (licopene and beta-carotene), which are known for their anti-health properties. There is a theory that tomatoes should not be consumed with cucumbers. As mentioned earlier, tomatoes are a good source of vitamin C, which acts as an antioxidant (inhibits the action of free radicals). There is an enzyme called ascorbinase in the cucumber that deactivates vitamin C. However, it should be remembered that this happens in a basal environment (pH = 5.6). To minimize the adverse effects of ascorphine, it is enough to lower something, for example. By adding acidic juice to a sauce based on citrus or balsamic acid.

5. Attention to histamine

Allergy sufferers and people who are sensitive to histamine should exercise caution as tomatoes and their preparations contain a high amount of this chemical compound. Consumption can cause symptoms such as nausea, redness of the skin, swelling, sneezing, tears, breathing problems, and even anaphylactic shock.

6. A little practice

Tomatoes and their preparations are great additives to many dishes. It's hard to imagine a pizza without tomato sauce, chips without ketchup, or a caprese salad without fresh tomato patches.
