How many calories do vegetables have? Why are they so important on the menu?

The Institute for Food and Nutrition recommends eating five servings of vegetables and fruits a day, three-quarters of which should be vegetables. Vegetables and fruit are the most important parts of a healthy and balanced diet. Why are they so important? The World Health Organization (WHO) recommends that you eat at least 400 grams of fruit and vegetables a day.

3. It's a food bomb

Green vegetables are a rich source of iron, calcium, vitamin K, and folic acid. Vegetables are also a source of protein. They are the primary source of this ingredient in the vegan diet. Thermal processing causes loss of vitamins and minerals. Vegets contain virtually all the regulatory components necessary for the body. Orange vegetables abound in beta-carotene and red in lycopene.

4. The source of the fiber

It also reduces cholesterol and triglycerides in the body. Vegetables contain a large amount of dietary fiber, most of which is a water-soluble fraction. It removes excess bile acids and slows the absorption of glucose into the bloodstream.

5. High antioxidant potential

Vegetables are not only a source of nutrients, regulators and fiber, but also a wealth of biologically active substances. Among the compounds that exhibit antioxidant properties are beta-carotene, vitamin C, phenolic acids, etc.
