The nutritional value of mushrooms depends on the species, the stage of development of the fruit, and the quality of the soil. They are mostly composed of water (8592%) and are therefore low in calories, but nonetheless heavy in fat. In addition, they contain a large amount of carbohydrates (35, 254, 8%), a small amount of protein (25%) and fat (28%) in dry matter.
