How many calories do mushrooms have? What's their nutritional value?

Today, they are also known to have a high nutritional value and exhibit health properties. In the past, they were consumed because of their taste and smell. Mushrooms are undoubtedly an important part of Polish cuisine.

1. The nutritional value of mushrooms

Fungal protein has a high biological value because it is composed of all the essential amino acids exogenous. The nutritional value of mushrooms depends on the species, the stage of development of the fruit and the quality of the soil. In addition, in dry matter they contain a large amount of carbohydrates (35, 254, 8%), small amounts of protein (25%) and fat (28%).

3. Source of B vitamins

Mushrooms are a very good source of B vitamins, including thiamine (B1), riboflavin (B2), niacin (B3) and pantothenic acid (B5).

4. The source of the mineral ingredients

The following table shows the content of selected mineral ingredients in the fresh agricultural cavern and shiitake mushrooms, which have recently gained increasing popularity in Poland. In smaller quantities they can be found in selenium, iron, copper, zinc, manganese and molybdenum. Mushrooms are also a very good source of mineral components such as potassium, calcium, magnesium, phosphorus.

6. Properties for health

They fight the excess of free radicals in the body, thus counteracting oxidative stress. Additionally, polysaccharides reduce blood sugar levels. They also work against HIV and the smallpox virus. Polysaccarides and polyphenols are natural antioxidants. They are also attributed to anti-cancer activity. Triterpenoids have a positive effect on the functioning of the cardiovascular system by lowering blood pressure and cholesterol levels. Mushrooms exhibit health-promoting properties due to their presence in bioactive compounds such as lignin, polycysides, triterpenes and polyphenoids.

7. Natural antibiotic of Poland: natural

Mushrooms contain antibacterial substances that inhibit the growth of bacteria responsible for skin problems and stimulate the immune system.
