Tofu is a low-calorie, naturally gluten-free product. It is characterized by a high protein content of very good quality, which is light in nutrition and has a similar amino acid content to meat protein.

Tofu does not contain cholesterol or hardened vegetable fats. It can be consumed by people who are struggling with cardiovascular disease. It helps to reduce the concentration of total cholesterol and LDL lipoproteins in the blood. Tofu is a source of isoflavones. Isoflavones (other phytoestrogens because they bind to estrogen receptors in the body) exhibit strong antioxidant properties.

The main ingredient of tofu is soybean, which is mostly genetically modified. The first modifications were described in 1988. Initial efforts were made to modify soybeans to reduce the cost of production. Soybeans are a very demanding plant. They require good quality, fertile soils, high sunshine and an optimum temperature (2030°C). Soybean seeds have been modified to increase yields, resistance to infection or tolerance to plant protection products.
